Bake incredibly soft, fluffy, and buttery dinner rolls from scratch. This recipe delivers bakery-style quality that is far better than store-bought options, perfect for family dinners or holiday side dishes.

  • 1 cup warm water (105-115°F)
  • 2 1/4 teaspoons active dry yeast
  • 1 tablespoon granulated sugar
  • 3 cups all-purpose flour, plus more for dusting
  • 1 teaspoon salt
  • 1/4 cup unsalted butter, melted, plus 4 tablespoons for topping
  • 1 large egg, lightly beaten
  • 1/4 cup whole milk, warmed slightly
  • Optional topping: 2 tablespoons honey and 1 teaspoon ground cinnamon

Instructions

  1. Combine the warm water, yeast, and 1 teaspoon of the sugar in a small bowl. Let this mixture sit for 5 to 10 minutes until it becomes foamy. This shows the yeast is active.
  2. In a large mixing bowl, whisk together the flour, salt, and the remaining 2 teaspoons of sugar.
  3. Add the melted butter, beaten egg, and warmed milk to the yeast mixture. Pour this wet mixture into the dry ingredients.
  4. Mix with a wooden spoon or a stand mixer on low speed until a shaggy dough forms.
  5. Knead the dough on a lightly floured surface for 6 to 8 minutes until it is smooth and elastic. The dough should pass the windowpane test.
  6. Place the dough in a lightly oiled bowl, turning it once to coat. Cover the bowl with plastic wrap or a clean kitchen towel. Let the dough rise in a warm place for 1 to 1.5 hours, or until it has doubled in size.
  7. Gently punch down the risen dough. Divide the dough into 12 equal pieces. Roll each piece into a smooth ball.
  8. Arrange the dough balls in a greased 9×13 inch baking pan, leaving about 1 inch between them for rising.
  9. Cover the pan loosely and let the rolls rise again in a warm spot for 30 to 45 minutes, or until they are puffy.
  10. Preheat your oven to 375°F (190°C).
  11. Bake the rolls for 15 to 18 minutes, or until they are golden brown on top.
  12. While the rolls are baking, melt the remaining 4 tablespoons of butter. If making the Texas Roadhouse style, mix the melted butter with the honey and cinnamon.
  13. Remove the rolls from the oven. Immediately brush the tops generously with the melted butter mixture.
  14. Serve the soft dinner rolls warm.

Notes

  • For a quicker rise, place the dough in an oven that has been turned off after preheating briefly.
  • If you want Texas Roadhouse Style Rolls, use the honey and cinnamon butter topping described in step 11.
  • You can make these rolls ahead; cover the unbaked rolls and refrigerate for up to 24 hours before baking. Add 5 minutes to the baking time if baking directly from the refrigerator.
