Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8-inch round springform pan and line the bottom with parchment paper.
  2. Place the chopped chocolate and butter in a heatproof bowl set over a saucepan of simmering water (or use a microwave in short bursts). Stir until completely melted and smooth. Remove from heat and let cool slightly.
  3. In a separate large bowl, whisk the egg yolks and granulated sugar together until the mixture is pale yellow and slightly thickened. Whisk in the vanilla extract.
  4. Pour the slightly cooled chocolate mixture into the egg yolk mixture and stir until just combined.
  5. In a clean, dry bowl, beat the egg whites with an electric mixer until stiff peaks form.
  6. Gently fold one-third of the beaten egg whites into the chocolate mixture to lighten it. Then, carefully fold in the remaining egg whites until no white streaks remain. Do not overmix.
  7. Pour the batter into the prepared springform pan.
  8. Bake for 30 to 35 minutes. The edges will look set, and the center will still be slightly soft. A toothpick inserted near the edge should come out with moist crumbs, not wet batter.
  9. Let the cake cool completely in the pan on a wire rack. The cake will sink in the center as it cools, creating a characteristic crackled top.
  10. Once cool, carefully release the springform side. Serve dusted with cocoa powder or powdered sugar.
