Make these soft, chewy Christmas Gooey Butter Cookies for a festive treat that melts in your mouth. This easy recipe uses cake mix and cream cheese for a perfect holiday texture.

  • 1 box (15.25 ounces) yellow cake mix
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 8 ounces cream cheese, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups powdered sugar, divided
  • 1/2 cup red and green sprinkles

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Line baking sheets with parchment paper.
  2. In a medium bowl, combine the yellow cake mix, 1/2 cup melted butter, and 1 egg. Mix until a soft dough forms.
  3. Press the dough evenly into the bottom of an ungreased 9×13 inch baking pan. Set aside.
  4. In a separate large bowl, beat the softened cream cheese until smooth.
  5. Add the second egg and vanilla extract to the cream cheese mixture. Beat until combined.
  6. Gradually add 1 cup of the powdered sugar to the cream cheese mixture, beating until the filling is smooth and creamy.
  7. Spread the cream cheese mixture evenly over the cake mix base in the baking pan.
  8. Sprinkle the top evenly with red and green sprinkles.
  9. Bake for 20 to 25 minutes, or until the edges are set but the center still looks slightly soft. Do not overbake.
  10. Remove the pan from the oven and let the cookies cool completely in the pan on a wire rack. Cooling is important for the gooey texture.
  11. Once cool, cut the cookies into squares.
  12. Place the remaining 1/2 cup of powdered sugar in a shallow dish. Dust the tops of the cooled squares lightly with the remaining powdered sugar before serving.

Notes

  • For an extra gooey center, slightly underbake the cookies by about 2 minutes.
  • You can substitute the yellow cake mix with white cake mix if preferred.
  • Chill the dough for 30 minutes before pressing it into the pan for easier handling.
