1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
6 tablespoons unsalted butter, melted
2 (8 ounce) packages cream cheese, softened
1 cup granulated sugar
1 teaspoon vanilla extract
3 large eggs
1 cup semi-sweet chocolate chips
Instructions
Preheat your oven to 325 degrees F. Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
Prepare the crust: In a medium bowl, mix the graham cracker crumbs, 1/4 cup sugar, and melted butter until combined. Press this mixture firmly into the bottom of the prepared pan. Bake for 10 minutes. Remove from the oven and let cool slightly.
Prepare the filling: In a large bowl, beat the softened cream cheese and 1 cup sugar with an electric mixer until smooth. Beat in the vanilla extract. Add the eggs one at a time, mixing just until combined after each addition. Do not overmix.
Gently fold in 3/4 cup of the chocolate chips into the cream cheese mixture.
Pour the cheesecake filling over the slightly cooled crust. Sprinkle the remaining 1/4 cup of chocolate chips over the top.
Bake for 30 to 35 minutes, or until the edges are set but the center still has a slight jiggle.
Turn off the oven, crack the door open slightly, and let the cheesecake cool in the oven for 30 minutes. This helps prevent cracking.
Remove the pan from the oven and cool completely on a wire rack. Once cool, cover and chill in the refrigerator for at least 4 hours, or preferably overnight, before slicing.
Use the parchment paper overhang to lift the chilled cheesecake out of the pan before cutting into bars.
Notes
For the creamiest texture, ensure your cream cheese is fully softened to room temperature before mixing.
If you prefer a darker crust flavor, substitute the graham crackers with crushed Oreo cookies (about 24 cookies).
