  • 1 tablespoon olive oil
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon smoked paprika
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 4 cups chicken broth
  • 8 ounces penne or rotini pasta
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • Salt and black pepper to taste

Instructions

  1. Heat the olive oil in a large skillet or Dutch oven over medium-high heat. Add the sliced chicken sausage and cook until browned on both sides, about 5 minutes. Remove the sausage and set it aside.
  2. Add the diced onion to the same skillet and cook until softened, about 3 minutes. Add the minced garlic, Italian seasoning, and smoked paprika. Cook for 1 minute until fragrant.
  3. Pour in the diced tomatoes (with their juice) and the chicken broth. Bring the mixture to a boil.
  4. Add the dry pasta to the skillet. Reduce the heat to medium-low, cover, and simmer for 12 to 15 minutes, stirring occasionally to prevent sticking, until the pasta is tender and most of the liquid is absorbed.
  5. Stir in the heavy cream and Parmesan cheese until the sauce is smooth and creamy.
  6. Return the cooked chicken sausage to the skillet. Add the fresh spinach and stir until the spinach wilts, about 1 to 2 minutes.
  7. Taste the pasta and add salt and pepper as needed. Serve immediately for a simple chicken sausage dinner.
