Make this easy, one-pan cheesy taco potato skillet for a satisfying weeknight meal. It combines crispy potatoes, seasoned ground beef, and melted cheese for ultimate comfort food flavor with minimal cleanup.

  • 2 pounds russet potatoes, diced into 1/2-inch pieces
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 packet (1 ounce) taco seasoning mix
  • 1 cup water
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • Optional toppings: sour cream, salsa, chopped green onions

Instructions

  1. Preheat your oven to 400°F (200°C). Toss the diced potatoes with olive oil, salt, and pepper on a large, rimmed baking sheet. Spread them in a single layer.
  2. Roast the potatoes for 20 minutes, stirring halfway through, until they start to become tender and lightly browned.
  3. While the potatoes roast, cook the ground beef in a large skillet over medium heat until fully browned. Drain off any excess fat.
  4. Stir the taco seasoning and water into the cooked ground beef. Bring the mixture to a simmer and cook for 5 minutes, allowing the sauce to thicken slightly.
  5. Remove the potatoes from the oven. Transfer the seasoned ground beef mixture to the baking sheet with the potatoes, spreading it evenly over the top.
  6. Sprinkle both the cheddar and Monterey Jack cheeses evenly over the potato and beef mixture.
  7. Return the pan to the oven and bake for an additional 5 to 8 minutes, or until the cheese is fully melted and bubbly.
  8. Remove from the oven. Serve immediately with your choice of toppings like sour cream, salsa, or green onions.
