  • For Homemade Ranch Dressing: 1/2 cup buttermilk, 1/2 cup mayonnaise, 1 teaspoon dried dill, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, salt and pepper to taste

Instructions

  1. Prepare the chicken: In a medium bowl, toss the chicken pieces with olive oil, salt, and pepper.
  2. Cook the chicken: Heat a large skillet over medium-high heat. Add the chicken and cook until browned and cooked through, about 6-8 minutes.
  3. Make the buffalo sauce: While the chicken cooks, whisk together the buffalo sauce and melted butter in a small bowl.
  4. Coat the chicken: Pour the buffalo sauce mixture over the cooked chicken in the skillet. Stir until the chicken is fully coated. Reduce heat to low and simmer for 2 minutes.
  5. Make the ranch dressing: In a separate small bowl, whisk together the buttermilk, mayonnaise, dill, garlic powder, onion powder, salt, and pepper until smooth.
  6. Assemble the bowls: Divide the cooked rice among four bowls. Top the rice with the spicy buffalo chicken.
  7. Add toppings: Arrange lettuce, cherry tomatoes, and shredded carrots around the chicken in each bowl.
  8. Serve: Drizzle generously with the homemade ranch dressing.
