  • 2 cups milk (dairy or non-dairy)
  • 1/2 cup unsweetened applesauce or melted butter
  • 1 teaspoon vanilla extract
  • 2 medium apples, peeled, cored, and diced
  • 1/2 cup chopped pecans or walnuts (for topping)
  • 1/4 cup all-purpose flour (for topping)
  • 3 tablespoons cold unsalted butter, cut into small pieces (for topping)
  • 2 tablespoons brown sugar (for topping)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8×8 inch baking dish.
  2. In a large bowl, combine the rolled oats, baking powder, cinnamon, salt, brown sugar, and granulated sugar. Mix these dry ingredients well.
  3. In a separate bowl, whisk together the eggs, milk, applesauce or melted butter, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Gently fold in the diced apples. Pour the mixture evenly into the prepared baking dish.
  6. Prepare the streusel topping: In a small bowl, combine the flour, 2 tablespoons of brown sugar, and chopped nuts. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  7. Sprinkle the streusel topping evenly over the oatmeal mixture in the baking dish.
  8. Bake for 35 to 40 minutes, or until the top is golden brown and the center is set.
  9. Let the baked oatmeal cool for about 10 minutes before slicing and serving warm. This is a great make ahead breakfast idea.
